Sweet potatoes are included in the diet to lower blood pressure, fight cancer, and provide a low hypoglycemic nutrition for diabetics. Recent research implies that it is being used to reduce episodes of low blood sugar.

Cooking Sweet Potatoes

It is a piece of cake to prepare sweet potatoes and just as tasty in my book. Here are some ways you can fix them up.

  • Baking- roasting
  • Boiling
  • Frying in skillet or deep fat.
  • Drying
  • Raw
  • Steamed

Frying Up A Nice Batch

I cut them in slices about as thick as an elephant’s hide, which is a quarter of an inch. Next I put the slices in a hot skillet with a touch of olive oil. I don’t put anything on mine. If you like, you can put salt, pepper, honey, cinnamon or whatever else makes your day. Watch over them with care and turn them when browned on one side. Don’t overcook the little buggers or they will just turn to mush.

Baking In The Oven

Jab your sweet potato with a fork or knife, and place in the oven at 4000 until they start to get soft. Never over-bake them as they turn too soft.
